I promised I would post a picture of my Cream of Carrot soup. There is actually very little cream in this soup -- the ingredients made it thick enough that I only added half a cup of cream to this large pot.
Ingredients:
- carrots
- cauliflower (since I had about half a head in the fridge)
- leftover small roasted potatoes
- chopped onions
- parsley
- fresh basil
- 35% cream
- 1 Knorr vegetable stock packet
- salt
- pepper
